Snow Peas are a good source
of protein and fiber, the antioxidant vitamins A and C, plus the
B vitamins thiamin and folic acid, which support the health of your
nervous system. Snow Peas are lower in protein than green peas,
but are an excellent source of calcium, which is essential for bone
health. Peas are a major source of complex carbohydrate, fiber,
protein, and minerals such as potassium, magnesium, and zinc. Chlorophyllin,
the pigment that makes peas green, does double duty as a cancer
preventer. It latches on to cancer-causing free radicals and helps
shepherd them out of the body before they can do any cellular damage.
